Ingredients:
- Kidney beans (2 cans)
- Black beans (2 cans)
- Diced tomatoes (28 oz can)
- Tomato paste (6 oz can)
- Beefless ground (1.5 cups) (I prefer the Gardein brand for this recipe)
- 1 red bell pepper
- 1 red onion
- Minced garlic (2 tbs)
- Fresh parsley (garnish)
Don’t forget the spices! Season to taste.
- Olive oil
- Salt
- Pepper
- Garlic powder
- Onion powder
- Chili powder
- Paprika
- Oregano
Instructions:
- Pour all beans, diced tomato, and tomato paste into the crockpot on medium heat and stir
- Add olive oil to a large pan and place on medium heat
- Once heated, sautee onion and red bell pepper until tender
- Add minced garlic to the pan (be careful not to burn)
- Add sauteed vegetables to your crockpot and stir
- Add olive oil to a large pan and place on medium heat
- Once heated, add 1.5 cups of beefless ground
- Once cooked add beefless ground to the crockpot and stir
- Add all spices and stir
- Slow cook in your crockpot on medium heat until finished
- Garnish with a bit of fresh parsley and enjoy!
