Ingredients:
- Brown rice (1 cup)
- Canned black beans (1/2 can)
- Red onion (1/2 half)
- Green pepper (1/2)
- Meatless chorizo (1 cup) (I use Morning Star chorizo crumbles)
- Pico de gallo
- Guacamole
Instructions:
- Prepare brown rice (instructions on rice bag or box)
- Prepare beans in pot (sprinkle a pinch of salt & pepper on beans) (instructions on can)
- Add olive oil to a pan on medium heat
- Once heated, add meatless chorizo, and pan cook until done
- Add olive oil to a pan
- Once heated, sautee bell pepper and onion
- Once bell pepper and onion are soft, remove from heat
- Add rice first, then beans to a bowl
- Then add chorizo “meat” then veggies to your bowl
- Top with a spoon full of pico de gallo and guacamole and dig in!
