Ingredients:
- “Tortilla Land fresh and ready-to-cook tortillas” (Any brand or flour tortillas work, but I strongly suggest using this one)
- Diced Potatoes (2 spoonfuls) (I use the frozen “Great Value” hashbrowns with onions and pepper pack)
- Canned black beans (2 spoonfuls)
- “Trader Joe’s” brand Siracha Tofu (1 spoonful of diced tofu)
- Egg (optional)
- Sautéed red pepper (1/3)
- Dairy free shredded mozzarella (1 spoonful)
- Avocado (1/3)
- Cilantro (garnish)
- Pico de Gallo (1 spoonful)
Instructions:
- Lightly coat frozen, diced potatoes in olive oil and salt
- Pan fry or air fry frozen potatoes until light golden brown and slightly crispy on the edges (it usually takes 15 minutes in the air fryer, time may vary if they are pan fried)
- Add canned black beans to a large pot, on medium heat
- Lightly sprinkle salt and pepper on the black beans in the pot
- Stir beans occasionally and cook until fully heated
- Add olive oil to a small pan, on medium heat
- When the oil is heated scramble one egg
- Lightly sprinkle egg with salt and pepper
- Using a knife, cut 1/3 of the siracha tofu
- Using the small section you cut, finely dice the tofu
- Add the diced tofu to a small oiled pan, on medium heat
- Sauté tofu until crispy on the edges
- Rinse red pepper and finely slice 1/3 of it
- Sauté red pepper slices in a small oiled pan, on medium heat, until soft and slightly discolored
- Vertically slice a small section of avocado (slightly off center to its core) (about 1/3 of it)
- After removing the skin off your slice, vertically cut your small section into about 3 slices
- Rinse off a handful of cilantro in your sink
- Heat a large skillet on medium heat
- Place 1 side of the tortilla on the skillet until golden brown, has brown spots, or until it puffs up from the heat
- Cook other side of tortilla for another 30 seconds – 1 minute or so
- Once tortillas are done, place your potatoes, black beans, eggs, and tofu on top of the hot tortilla (nuke hot items in microwave if needed)
- Then top it off with the sliced avocado, cilantro, dairy-free shredded cheese, and Pico de Gallo
- Serve and enjoy!
