Ingredients:
- Whole wheat toast
- 1 half of an avocado for 1 slice | 1 whole avocado for 2 slices
- Cherry tomatoes (4)
- 1 red onion (optional)
- Red wine vinegar (optional)
- Everything bagel seasoning (I prefer Trader Joe’s brand)
- Salt
- Pepper
Instructions:
- Cut avocado in half (horizontally) and remove core
- Use a spoon to scoop the avocado out from the skin
- Put avocado in bowl and mash with a fork
- Add a pinch of salt and pepper
- Stir with a fork or spoon until smooth
- Pour a bit of olive oil (or avocado oil) in a pan and place on the stove on medium heat
- Once hot, add sliced cherry tomatoes to the pan
- Sautee until soft and slightly seared
- Put your toast in the toaster for 1-1.5 minutes
- Once toast is ready, spread avocado spread on it
- Sprinkle everything bagel seasoning on it
- Top with sauteed cherry tomatoes
Optional Step: Top avocado toast with pickled red onions
Instructions for pickling:
- Finely slice your onion
- Place slices into a jar, cup, or container
- Pour red wine vinegar into jar (enough to fully cover the onion slices)
- Seal jar
- Let onions soak for 24-48 hours (in room temperature or refrigerate)
- If you don’t have time to truly pickle the onions, I have found that they start to take on the pickled flavor as early as 20 minutes.
- After pickled, top your avocado toast with a few slices and enjoy!
